Yummy Breakfasts

I have put together a small collection of  easy breakfasts for everyday - whether you're on the go or for a leasurely weekend...

Quick Breaky on the go

You need:

An old jam or sauce jar or mason jar

1/4 cup  chia seeds

1/2 cup coconut milk

1/2 cup water (or 1 cup of light coconut milk)

1 tbsp honey

2 tbsp frozen berries or more if you like

1 tbsp of chopped nuts or seeds ( a mix of sesame and pepita works well.

Method:

Mix chia seeds, coconut milk, water and honey together in jar, refrigerate over night. 

Next day, top with berries and seeds or nuts and enjoy. 

Cheesy egg for the weekend

You need (2 people):

frying pan

2 eggs

2 slices of cheese

1 Avocado, a bit of lemon

2 handful of baby spinach leaves

a few baby tomatoes

1 lebanese cucumber, halved

400 g mushrooms, sliced

seasoning - salt, pepper, thyme

Method:

half the avocado and drizzle with lemon juice

heat up frying pan and spray lightly with olive oil spray, crack the eggs into the pan and prick the egg yolk with a fork so it mixes with the egg white. 

When the egg is almost cooked, place a slice of cheese on top, put the lid on the pan and let the cheese melt. 

In the meantime, melt a little butter in a another frypan, add the mushies, season with thyme, salt and pepper and cook until soft.

 

Replace mushies with baby spinach and just let the leaves wilt a little, season with salt and pepper.

Arrange tomatoes, avocado, cucumber and mushies on plate, add baby spinach and cheesy egg. 

Heaven on a plate!
